Ingredients
- 2 lb. beef (chili grind or chuck)
- 2 c. dry pinto beans
- 1 onion (medium to large)
- 1/2 c. bell pepper or more to taste*
- 1 1/2 tsp. cumin
- 1/2 tsp. garlic powder
- 1 tsp. lemon juice
- 1/4 c. brown sugar
- salt and pepper to taste
- 1 can Ro-Tel tomatoes and green chilies
- 2 cans diced tomatoes
Directions

1Soak and cook pinto beans until done, 3 to 4 hours.

2Brown chili grind or chuck (chili grind is better, or buy a roast and have them run it through the coarse grinder).

3Brown until the red is gone.

4Drain fat.

5Saute onion and bell pepper and cook 5 minutes.

6Drain.
