Chilled Fruit Soup

Ingredients

  • 3 cups fresh or frozen blueberries, blackberries, or raspberries (packed without sugar)
  • 2 cups water
  • 2 tablespoons lemon or lime juice
  • Splenda to equal 1/2 cup sugar
  • 1/4 teaspoon ground nutmeg or ginger
  • 1 3-inch cinnamon stick
  • 1/8 teaspoon salt
  • 1 pint plain yogurt or flavored to match fruit (use low fat sugar free yogurt)
  • lemon or lime slices for garnish

Directions

    In a large saucepan, combine fruit, water, lemon juice, Splenda, nutmeg, cinnamon stick, and salt. Cover and simmer 10 minutes. Discard cinnamon stick. Pour fruit mixture into a blender or food processor. Process until smooth. Pour into a large bowl. Cover. Refrigerate to chill.

    To serve, stir yogurt into fruit mixture until smooth. Pour into individual bowls or serve in a chilled soup tureen. Garnish with lemon slices.
