Ingredients

  • 40 g pureed green limes
  • 250 g mango puree
  • 100 g passion fruit puree
  • 100 g apricot puree
  • 1 vanilla pod
  • 1 whole orange, zest of, only
  • 1 whole lemon, zest of, only
  • 200 g water
  • 150 g sugar

Directions

    Put all ingredients into a heavy-base pot.

    Bring to a boil.

    Fill basin of water with ice cubes.

    Cool down the boiled ingredients in the ice bath prepared.

    Opt to garnish with berries and fruits as follows : kiwi, strawberries, oranges (cut into cubes); raspberries and blueberries.

    Soup should be chilled for minimum 1 hour before serving.
