Chilli Con Carne

Ingredients

  • 4 tablespoons oil
  • 1 pound potatoes peeled and cut into wedges
  • 1 1/4 pounds ground beef
  • 1 onion peeled and finely chopped
  • 3 bell peppers one each red, green and yellow, seeded and finely chopped
  • 2 tablespoons tomato paste
  • 14 1/2 ounces diced tomatoes
  • 1 cup vegetable stock
  • 14 1/2 ounces red kidney beans drained
  • 14 1/2 ounces corn drained
  • chili powder
  • parsley to garnish

Directions

    Heat 3 tbsp of oil in a frying pan and fry the potatoes over a medium heat for about 15 mins. Season to taste.

    Heat 1 tbsp of oil in another frying pan and fry the beef over a high heat until it becomes crumbly. Add the onion and bell peppers and saute them briefly. Season to taste and add the tomato paste, tomatoes and vegetable stock. Bring to a boil and simmer for 5 mins. Add the kidney beans, corn and chili powder and season again to taste. Fold in the potatoes and serve garnished with parsley.
