  • 4 cups cooked chicken, shredded
  • 12 white onion, chopped
  • 3 garlic cloves, minced
  • 1 (4 ounce) can diced green chilies
  • 1 cup diced tomato
  • 1 (10 ounce) can enchilada sauce
  • 1 (10 ounce) can black beans
  • 1 cup shredded cheddar cheese
  • 14 cup chopped cilantro
  • 6 flour tortillas, burrito size
  • sour cream

Directions

    Heat oven to 400.

    Saute onions in a little oil in a skillet.

    When softened, add garlic and cook for about a minute.

    Add chicken, tomatoes, black beans, and green chiles.

    Heat tortillas to make them pliable.

    Turn off heat, add cheese and cilantro.

    Spoon 1/6 mixture on each tortilla and roll up.

    Place on a greased pan and rub top of burrito lightly with oil.

    Bake until golden, about 20 minutes.

    In a separate pan, heat the enchilada sauce.

    Spoon warm enchilada sauce on a plate, lay chimichito on top, add some enchilada sauce and top with a spoonful of sour cream.
