Ingredients

  • 1 lb. ground beef
  • 1 medium onion
  • 1 (8 1/4 oz.) can refried beans
  • 1 medium tomato, chopped
  • 1/3 c. minced parsley
  • 2 Tbsp. salsa
  • 1 1/2 tsp. oregano
  • 3/4 tsp. cumin
  • 1 1/2 c. chopped olives
  • 8 flour tortillas

Directions

    Saute beef and onion.

    Remove from heat, add beans, tomato, parsley, salsa, oregano, cumin and half of olives.

    Fry each tortilla until crisp. Quickly spoon filling into center of tortilla.

    Fold inside and roll up around filling.

    Secure with toothpick.

    Fry rolls in oil.

    Top with olives, cheese, lettuce and tomatoes.
