Chinese Braised Ribs

Ingredients

  • 2 tablespoons canola oil or 2 tablespoons vegetable oil
  • 2 14 lbs pork spareribs, cut in 2-inch by 1-inch pieces
  • 12 cup soy sauce
  • 1 tablespoon hoisin sauce
  • 1 cup rice wine or 1 cup dry white wine
  • 14 cup shaoxing wine or 14 cup dry sherry
  • 18 teaspoon red pepper flakes, to taste
  • 14 teaspoon five-spice powder
  • 2 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons golden syrup or 2 tablespoons honey

Directions

    In a large Dutch oven, heat oil over medium flame until it shimmers.

    Add ribs and brown on all sides, 3-5 minutes.

    Add remaining ingredients, bring to a boil, reduce to simmer, cover and cook 45 minutes.

    Check occasionally, and add a little water if it appears to be drying out (it shouldn't).

    Remove the lid and skim off any excess fat.

    Continue cooking until the sauce is reduced to a thick, sticky glaze, 10-15 minutes.

    Watch carefully, stirring occasionally, to be sure it doesn't burn.
