Chinese Chicken and Ginger

Ingredients

  • 2 teaspoon oil
  • 1 onion, sliced finely
  • 2 teaspoon fresh grated ginger
  • 500g skinless chicken breast fillets, thinly sliced
  • 2 cups sliced cabbage
  • 1 stick celery, sliced diagonally
  • 1 red capsicum, sliced
  • 425g can baby corn, drained
  • 1/2 cup water
  • 1 tablespoon VEGEMITE
  • 1 tablespoon honey
  • 1 teaspoon cornflour
  • Steamed rice or noodles to serve

Directions

    Heat oil in a frying pan or wok, add onion and ginger and cook until softened.

    Add chicken and cook until browned.

    Add cabbage, celery, capsicum and baby corn and cook 2 - 3 minutes.

    Add combined water, Vegemite*, honey and cornflour.

    Bring to the boil, stirring, until thickened.

    Serve immediately with rice or noodles.
