  • 1 egg, beaten
  • 1 tsp. oil
  • 1 1/2 c. water
  • 2 Tbsp. soy sauce
  • 1/4 c. chopped scallions, including tops, or use 1/4 c. chopped parsley
  • 1 clove garlic, crushed
  • 1 1/2 c. dry Minute rice

Directions

    Scramble egg in oil in saucepan, stirring to break into pieces. Add water, soy sauce, scallions and garlic; bring to a boil.

    Stir in rice.

    Cover, remove from heat and let stand 5 minutes.

    Stir. Makes 4 servings.
