- 1/2 c. finely chopped cooked ham, chicken or pork
- 2 Tbsp. hot oil
- 3 finely sliced fresh mushrooms
- 1 qt. cold cooked rice
- 1 finely chopped green onion
- 2 Tbsp. soy sauce
- 1 egg, well beaten
Directions

1Fry meat in hot oil.

2Add mushrooms, rice, green onion and soy sauce.

3Fry over low heat 10 minutes.

4Add 1 well beaten egg; cook and stir 5 minutes more.

5If color isn't dark enough, add a little more soy sauce.

6Makes 6 to 8 servings.
