Ingredients

  • 1 lb. ground beef or turkey
  • 2 eggs, beaten
  • 3/4 c. minced celery
  • 1/2 c. ground toasted almonds
  • 1/2 c. breadcrumbs
  • 1 clove garlic, crushed
  • 1 Tbsp. soy sauce
  • 1/2 tsp. salt
  • 1/3 c. cornstarch
  • 2 Tbsp. vegetable oil
  • 1 (15 1/4 oz.) can pineapple chunks (undrained)
  • 1/2 c. sugar
  • 3 Tbsp. cornstarch
  • 1 c. chicken broth
  • 1/2 c. vinegar
  • 2 Tbsp. soy sauce
  • 1 medium-size green pepper, cut into thin strips

    Combine first 8 ingredients; shape into 1-inch balls.

    Dredge in 1/3 cup cornstarch.

    Pour oil into a 13 x 9 x 2-inch pan; add meatballs and bake at 350°

    for 35 to 40 minutes.

    Drain and set aside.

    Drain pineapple, reserving 1/2 cup juice; set pineapple aside.
