- 1 lb. spinach, rinsed well
- 2 Tbsp. olive oil
- 1/2 tsp. sugar
- 2 Tbsp. soy sauce
- 1/2 c. sliced water chestnuts
- 2 Tbsp. chopped onion
Directions

1Cut fresh spinach stems into 3-inch pieces.

2Tear leaves into bite size pieces.

3Cook, covered, in a very small amount of water. Reduce heat when steam forms.

4Cook 3 to 5 minutes, turning frequently with a fork.

5Drain well.

6Heat oil, sugar and soy sauce in a skillet. Add spinach, water chestnuts and onion.

7Cook, tossing lightly, 2 to 3 minutes or until spinach is coated and heated.
