Chipotle Chile Slaw

  • 9 chipotle chiles (if using canned, then drain first)
  • 3 garlic cloves
  • 3 cups vegan mayonnaise
  • 3 tablespoons lemon juice
  • salt and pepper
  • 1 12 cabbage

Directions

    Using a mortar and pestle or food processor, mash or puree chilies with garlic clove.

    Blend into vegannaise.

    Stir mixture into shredded cabbage, seasoning to taste with salt, pepper, and a few drops of lemon juice if desired.

    Refrigerate until ready to serve.
