  • 2 onions, chopped Safeway 3 lb For $2.99 thru 02/09
  • 3 stalks celery, chopped
  • 1 each red and green pepper, chopped
  • 2 canned chipotle peppers in adobo sauce, finely chopped
  • 2 cloves garlic, minced
  • 2 Tbsp. chili powder
  • 2 cans (796 mL each) no-salt-added diced tomatoes, undrained
  • 2 cans (398 mL each) no-salt-added kidney beans, rinsed
  • 1/2 cup Cracker Barrel Shredded Light Tex Mex Cheese
  • 1/4 cup chopped fresh cilantro

Directions

    Brown meat with onions in large saucepan on medium-high heat.

    Add celery, red peppers and green peppers; cook 8 min.

    or until crisp-tender, stirring occasionally.

    Stir in chipotle peppers, garlic and chili powder; cook 1 min.

    Add tomatoes and beans; stir.

    Bring to boil; cover.

    Simmer on medium-low heat 15 to 20 min., stirring occasionally.
