- 10 lb. chitlings
- 2 red pepper pods, chopped
- 2 bay leaves
- 1 garlic clove
- 2 large onions
- 1 stalk celery with leaves
- 2 Tbsp. salt
- 1 1/2 tsp. black pepper
- 1/2 c. lemon juice
Directions

1Clean chitlings thoroughly.

2Wash several times in cool water, removing all gut and excess fat.

3Drain a few minutes.

4Place chitlings in pot and cover with water.

5Add all other ingredients. Bring to a gentle simmer.

6Cover and simmer for 4 hours or until tender.

7If a pressure cooker is available, cook for 2 hours.
