  • 10 lb. chitlings
  • 2 red pepper pods, chopped
  • 2 bay leaves
  • 1 garlic clove
  • 2 large onions
  • 1 stalk celery with leaves
  • 2 Tbsp. salt
  • 1 1/2 tsp. black pepper
  • 1/2 c. lemon juice

Directions

    Clean chitlings thoroughly.

    Wash several times in cool water, removing all gut and excess fat.

    Drain a few minutes.

    Place chitlings in pot and cover with water.
  5. 5
    Add all other ingredients. Bring to a gentle simmer.

    Cover and simmer for 4 hours or until tender.

    If a pressure cooker is available, cook for 2 hours.
