Chocolate Almond Macarons

  • 1 1/4 cups ground almonds
  • 3 None large egg whites
  • 1/4 cup granulated sugar
  • 1 cup powdered sugar, sifted
  • 1/4 cup cocoa powder, plus 2 tsp
  • 1/3 cup heavy cream
  • 5 oz semi-sweet chocolate, finely chopped

    Preheat oven to 300°F. Grease and line 2 baking trays with parchment paper.

    In a food processor, process ground almonds until fine then sift through a fine-mesh strainer. Set aside.

    Whip egg whites to soft peaks. Gradually add sugar, beating until dissolved. Fold in powdered sugar, 1/4 cup cocoa powder and ground almonds in 2 batches. Transfer to a piping bag and pipe 1 1/2 inch rounds, 1 1/4 inches apart, on prepared trays. Tap trays on a table so that macarons spread slightly. Let stand for 30 mins, or until dry to the touch.

    Bake macarons for 20 mins, or until macarons move without breaking when gently pushed. Let cool on trays.

    Meanwhile, for the filling, bring cream to a boil in a small saucepan. Remove from heat and add chocolate. Stir until smooth. Chill for 20 mins, or until spreadable.

    Sandwich macarons with 1 tsp chocolate filling. Dust with remaining cocoa powder to serve.
