  • 2/3 cup potato flour
  • 3/4 cup brown rice flour
  • 1 teaspoon baking soda
  • 1/4 cup cocoa powder
  • 1 cup granulated sugar
  • 4 apples peeled, coarsely grated
  • 1/4 cup ground flaxseed
  • 4 eggs beaten lightly
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • chocolate icing
  • 1 cup powdered sugar
  • 1 tablespoon cocoa powder
  • 3 tablespoons apple juice

Directions

    Preheat oven to 350°F. Grease and line a 12x8 inch baking pan with parchment paper.

    Sift dry ingredients into a large bowl. Stir in grated apples, ground flaxseed, eggs, oil and vanilla. Transfer to prepared pan and bake for 45 mins. Invert onto a wire rack to cool.

    Meanwhile, to make the chocolate icing, combine powdered sugar, cocoa powder and apple juice to make a thick icing. Spread over cooled cake to serve.
