  • 9 Tbsp. cocoa
  • 1 1/2 c. boiling water
  • 3 c. flour
  • 3 c. sugar
  • 3/4 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 3/4 c. margarine
  • 3 eggs
  • 3/4 c. buttermilk
  • 1 1/2 tsp. vanilla
  • 1 1/2 tsp. salt

Directions

    Mix cocoa, margarine and boiling water.

    Mix rest of dry ingredients; add to cocoa mixture.

    Add eggs, beating well.

    Add buttermilk and vanilla; beat again.

    Pour into greased pan and bake at 350° for 35 to 40 minutes.

    Makes 40 cupcakes; bake at 350° for 20 to 25 minutes.
