Ingredients

  • 2 c. flour
  • 1 1/2 c. sugar
  • 1/4 c. cocoa
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 2 c. shredded carrots
  • 1 c. oil
  • 1/2 c. orange juice
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 4 eggs
  • 4 oz. coconut

    Preheat oven to 350°.

    Grease and flour 10-inch Bundt pan.

    In large bowl, beat all ingredients, except carrots and coconut, until just blended, constantly scraping bowl with rubber spatula. Increase speed to high; beat 2 minutes, occasionally scraping bowl with rubber spatula.

    Stir in carrots and coconut.

    Spoon batter into pan.

    Bake 50 to 55 minutes, until done.

    Cool on wire rack 10 minutes.

    Remove from pan.
