- 2 c. flour
- 1 1/2 c. sugar
- 1/4 c. cocoa
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 2 c. shredded carrots
- 1 c. oil
- 1/2 c. orange juice
- 2 tsp. baking soda
- 1 tsp. salt
- 4 eggs
- 4 oz. coconut
Directions

1Preheat oven to 350°.

2Grease and flour 10-inch Bundt pan.

3In large bowl, beat all ingredients, except carrots and coconut, until just blended, constantly scraping bowl with rubber spatula. Increase speed to high; beat 2 minutes, occasionally scraping bowl with rubber spatula.

4Stir in carrots and coconut.

5Spoon batter into pan.

6Bake 50 to 55 minutes, until done.

7Cool on wire rack 10 minutes.

8Remove from pan.
