  • FOR THE CRUST:
  • 1-1/4 cup Graham Cracker Crumbs (16 Squares)
  • 2 Tablespoons Sugar
  • 3 Tablespoons Butter Or Margarine, Melted
  • FOR THE FILLING:
  • 19 ounces, weight Cream Cheese, Softened
  • 1 cup Sugar
  • 1/4 cups Cocoa
  • 2 teaspoons Vanilla
  • 3 whole Eggs

    Heat oven to 350°F. For the crust, mix crumbs and sugar; mix in melted butter or margarine thoroughly. Press evenly on bottom of ungreased 9x3 springform pan. (A 9-inch glass pie pan will work too if you don't have a springform pan.) Bake 10 minutes; cool.

    Reduce oven temperature to 300°F. For the filling, beat cream cheese in a 3-quart bowl. Gradually beat in sugar and cocoa until fluffy; add vanilla. Beat in eggs, one at a time. Pour over crumb mixture. Bake until center is firm, about 1 hour. Cover and refrigerate at least 3 hours but no more than 48 hours.
