Chocolate Cherry Bars

Ingredients

  • 7 oz dark chocolate, chopped
  • 12 tbsp unsalted butter, chopped
  • 3 None eggs, lightly beaten
  • 1 cup firmly packed brown sugar
  • 1 cup all-purpose flour, sifted
  • 1 cup shredded coconut, plus extra to serve
  • 4.5 oz dark chocolate chips
  • 1 (15 oz) can pitted cherries in syrup, drained

    Preheat oven to 350°F. Lightly grease and line a 12x8 inch cake pan.

    Heat chocolate and butter in a saucepan over low heat, stirring, for 3-4 mins, until smooth and combined. Let cool for 10 mins then whisk in eggs. Add brown sugar, flour and coconut. Fold in 1/2 the chocolate chips. Transfer to prepared pan.

    Push cherries into batter and sprinkle with remaining chocolate chips. Bake for 30-35 mins, until firm. Let cool in pan for 10 mins then turn out onto a wire rack to cool completely. Cut into pieces and sprinkle with extra coconut to serve.
