  • 1 cup water
  • 3 1/2 tablespoons butter
  • salt
  • sugar
  • wine
  • 2 tablespoons vin santo
  • 2 cups flour
  • 6 eggs
  • 1 lemon
  • 6 2/3 tablespoons chocolate chips
  • 1 teaspoon vanilla
  • vegetable oil
  • powdered sugar

Directions

    Bring the water to a boil with the butter, a pinch of salt, the vin santo, and 25 grams of sugar.

    Add the flour and stir continuously and keep the dough on the heat until it no longer sticks to the saucepan while sizzling lightly.

    Place the dough in the mixer bowl and allow it to cool.

    Knead the dough with the mixer's hook attachment and add the eggs, one at a time, lemon zest, and chocolate chips (or raisins), and vanilla.

    Heat the oil and add the dough in small spoonfuls. The dough will puff up and the interior will be almost hollow.
