- 3/4 c. mashed potatoes
- 1 lb. flaked coconut
- 1 lb. confectioners sugar, sifted
- 1/4 tsp. almond extract
- 1/4 tsp. vanilla extract
- chocolate coating (recipe follows)
Directions

1Combine ingredients, except coating.

2Drop by heaping teaspoonfuls onto waxed paper.

3Roll in balls; refrigerate 1 to 2 hours.

4If mixture is too soft to form balls, refrigerate first, then shape balls.

5Dip chilled balls of coconut mixture in coating, turning to coat on all sides.

6Keep chocolate over hot water while dipping candy.

7With tongs or fork, lift balls out of chocolate on waxed paper.

8Place candies in refrigerator to harden.

9Store in tightly sealed container.

10Makes about 5 dozen.
