  • 4 ounces, weight Self Raising Flour
  • 3 ounces, weight Coconut
  • 4 ounces, weight White Sugar
  • 2 Tablespoons Cocoa
  • 6 ounces, weight Butter

Directions

    Preheat oven to 200 degrees Celsius (350 Fahrenheit).

    Mix flour, coconut, sugar and cocoa together in a large mixing bowl.

    Melt the butter and add to dry ingredients, mixing well. Mixture should be slightly moist, and it doesn't matter if it's a bit crumbly.

    Put mixture in rectangular slice pan, pressing it in with a wooden spoon.

    Bake in oven for 15-20 minutes.

    When cool, ice with chocolate icing.

    **I usually refrigerate it to make it extra crunchy, but it's just as nice to let it cool naturally, giving it a slightly crumbly texture.
