Ingredients: 1 teaspoon unflavored gelatin; 1 tablespoon cold water; 2 tablespoons boiling water; 12 cup sugar; 14 cup cocoa; 1 cup cold whipping cream; 1 teaspoon almond extract; fresh raspberry (optional)

Directions

In small cup, sprinkle gelatin over cold water.

Let stand 1 minute to soften add boiling water Stir til gelatin is completly dissolved and mixture is clear cool slightly In small mixing bowl, stir together sugar& cocoa; add whipping cream& vanilla Beat on medium speed of mixture, scraping bottom of bowl occasionally, til mixture is stiff Pour in gelatin mixture; beat til well blended Spoon into serving dishes or champagne glasses Refrigerate about 30 minutes Garnish with raspberries, chocolate curls or miniature chips.
