- 1 pkg. semi-sweet chocolate pieces
- 1 Tbsp. flour
- 3 eggs, separated
- 1/2 c. milk
- 4 Tbsp. butter
- 1 Tbsp. vanilla or rum
- 1 Tbsp. grated orange rind
- 1 1/2 c. heavy cream
Directions

1Combine sugar, flour and egg yolks; stir in milk; heav over low heat, stirring with whisk until mixture reaches consistency of mustard sauce.

2Add butter, 1 tablespoon at a time, stirring constantly.

3Remove from heat.

4Add chocolate; stir until melted. Stir in vanilla or rum, and orange rind.

5Cool slightly.

6Add stiffly beaten egg whites and 1 cup of the cream, whipped stiff. Pour into sherbert dishes.

7Chill about 5 hours, until firm.

8Whip remaining cream as topping.
