Chocolate Mousse

- 3 1/2 oz (100g) bittersweet chocolate, chopped
- 1 tbsp whole milk
- 2 large eggs, separated
- 2 tbsp sugar
- 1/3 cup heavy cream
- Grated chocolate or chocolate curls, to decorate
Directions

1Combine the chocolate and milk in a heatproof bowl and place over a saucepan of simmering water.

2Heat, stirring often, until the chocolate melts.

3Remove from the heat and let cool slightly.

4Whisk the egg yolks and sugar in a large bowl until thick and creamy.

5Whisk in the chocolate mixture.

6Whip the cream in a bowl until stiff peaks form.

7Add the chocolate mixture and fold together just until combine.

8Using clean beaters, whip the egg whites until stiff peaks form.

9Stir some of the whites into the chocolate mixture, then fold in the rest.

10Spoon into individual dishes.

11Cover and refrigerate at least 2 hours, until chilled.

12Garnish with grated chocolate and serve chilled.

15For a sweeter and lighter taste, make the mousse with 50 percent dark chocolate or milk chocolate.
