  • 3/4 c. sugar
  • 3 c. hot milk
  • 6 Tbsp. cornstarch
  • 4 eggs, separated
  • 1 1/2 sq. chocolate or 3 Tbsp. cocoa
  • 1/8 tsp. salt

    Mix cornstarch, sugar and salt.

    Add the hot milk, stirring constantly.

    Cook in double boiler until mixture is thick.

    Cool slightly.

    Pour into baked pastry shell.

    Cover with meringue made from the egg whites and bake in a slow oven (250° to 300°) until a delicate brown.
