  • 4 ounces butter
  • 6 ounces plain flour
  • 12 teaspoon salt
  • 1 teaspoon baking powder
  • 4 ounces sugar
  • 2 ounces cocoa
  • 2 eggs, lightly beaten
  • 5 tablespoons milk
  • 14 teaspoon vanilla essence

    Pre heat oven to 375F, Gas 5, 190C.

    Using a tablespoon of the butter, grease a medium size pie or souffle dish.

    Set aside.

    Sift the flour, salt and baking powder into a medium size mixing bowl.

    With your fingertips rub the remaining butter into the mixture till it resembles fine breadcrumbs.

    Stir in the sugar and cocoa.

    With a wooden spoon beat in the eggs and milk and continue beating until mixture is smooth and of a dropping consistency.

    Add the vanilla essence and mix inches.

    Pour the mixture into the greased dish and bake just above the centre of the oven for 30-40 minutes or until a skewer inserted in the centre comes out clean.

    Serve warm with chocolate sauce or custard.
