- 2/3 c. unsweetened cocoa powder
- 2 Tbsp. cornstarch
- 2 1/4 c. skim milk, divided
- 1/2 c. granulated sugar
- 1/8 tsp. salt
- 1 tsp. vanilla extract
- unsweetened cocoa powder (for garnish)

1Beat egg whites in small bowl.

2In a large bowl, mix 2/3 cup cocoa and cornstarch.

3Put 3/4 cup milk into cocoa mixture.

5a large heavy saucepan, bring to boil on high heat, whisking constantly.

6Remove pan from heat.

7Mix cocoa mixture into hot milk mixture.

8Boil on medium-high heat. Boil 2 minutes.

9Remove pan from heat.

10Whisk 1 cup hot cocoa mixture into egg whites. Pour mixture into pan.

11Cook on medium-low heat 2 minutes. Do not boil. Remove pan from heat. Add vanilla. Blend well.

12Pour pudding into serving dishes. Cool to room temperature. Cover and chill 1 hour. Garnish with cocoa.
