22. In medium saucepan, heat 700 g granulated sugar and water to 120 degrees C/248 degrees F. Add to whipping egg whites to make Italian Meringue.

4r. Using a star tip, pipe 'S' shapes onto a silicon baking mat and bake at 170-180 degrees C/338-356 degrees F in a steam-free oven with doors slightly open.
