Chocolate Truffles

Ingredients

  • 7 oz dark chocolate, 70% cocoa, coarsely chopped
  • 1/3 cup whipping cream
  • 1.5 oz almond cookies, crushed
  • 1.5 oz raisins, chopped
  • 1/2 tsp ground cinnamon
  • 13.25 oz milk chocolate chips, melted
  • 5.25 oz white chocolate chips, melted
  • None None Shaved milk chocolate, to serve

Directions

    Place dark chocolate and cream in a heatproof bowl over a saucepan of gently simmering water. Stir 2-3 mins or until chocolate has melted and mixture is smooth. Remove from heat. Stir in crushed cookies, raisins and cinnamon. Chill until firm enough to handle.

    Line a baking sheet with parchment paper. Using hands to roll tablespoonfuls of mixture into balls. Place on baking sheet and chill for 30 mins or until firm.

    Using a dipper or fork, dip 1 truffle at a time into milk chocolate, coating evenly and allowing excess chocolate to drain off. Place on baking tray and leave for 10 mins to set.

    Using a piping bag with a small round tip, or a sealed sandwich bag with a corner snipped off, pipe a white chocolate cross on the top of each truffle. Leave for 10 mins to set. Sprinkle with shaved chocolate.
