Ingredients

  • 4 slices bacon
  • 1/3 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 tsp dijon mustard
  • 1 clove garlic, minced
  • 2 heads baby romaine, roughly chopped
  • 4 None tomatoes, roughly chopped
  • 1 None large cucumber, roughly chopped
  • 1 None yellow pepper, deseeded, roughly chopped
  • 3 None spring onions, finely sliced
  • 2 1/4 cups alfalfa sprouts, roughly chopped
  • 7 oz feta cheese, crumbled

Directions

    Lightly oil a nonstick frying pan and cook bacon over medium heat for 3-4 mins per side, until crispy. Drain on paper towels then roughly chop. Set aside.

    Whisk together olive oil, lemon juice, dijon mustard and garlic. Toss 1/2 of vinaigrette with remaining ingredients and bacon. Serve.
