- 3 oz chorizo sausage
- 1/2 spanish onion; small dice
- 1/2 bell pepper; small dice
- 1 roasted poblano pepper; medium dice
- 1 large Idaho potato; peeled, small dice
- 2 clove garlic; minced
- 1 tbsp ground allspice
- 1 tbsp ground cumin seed
- 1 tbsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp ancho chile powder
- 1 tsp cinnamon
- 2/3 cup salsa
- 1/2 cup shredded chihuahua cheese
- 1 vegetable oil; as needed
- 1 salt and pepper
Directions

1Cover potatoes with cold water.

2Add a pinch of salt.

3Cook until nearly tender.

5Heat vegetable oil in a cast iron skillet or oven safe pan.

6Add chorizo, bell pepper, and onion.

7Season with dried spices except cinnamon.

8Add garlic when meat is browned and veggies are nearly tender.

9Saute until fragrant.

10Add potatoes, serrano pepper, and cinnamon.

11Stir to incorporate.

12Add cinnamon and stir.

13Add salsa.

14Reduce until nearly evaporated.

15Top with cheese and place very briefly under the broiler to melt the cheese.
