Ingredients
- 6 medium onions, chopped
- 6 green peppers, chopped
- 6 sweet red peppers, chopped
- 1/4 c. pickling salt
- 1 tsp. turmeric
- 1 tsp. ginger
- 1 Tbsp. celery seed
- 1 medium (2 qt.) chopped cabbage
- 1 qt. chopped green tomatoes
- 2 Tbsp. prepared mustard
- 6 c. vinegar
- 2 1/2 c. sugar
- 2 Tbsp. mustard seed
- 1 Tbsp. mixed whole pickling spices
Directions

1Combine vegetables and mix with salt.

2Cover; let stand overnight and drain.

3Mix mustard with a little vinegar in kettle. Add remaining vinegar, sugar and spices.

4Simmer 20 minutes. Add vegetables and simmer 10 minutes.

5Continue simmering while packing one hot sterilized jar at a time.

6Fill to within 1/8-inch from jar top.

7Make sure liquid covers vegetables.

8Seal each jar at once.

9Process in boiling water bath (212°F) for 5 minutes. Makes 6 to 8 pints.

10Use relish within 6 months.
