Ingredients
- 2 fresh, cut up chickens
- 1 onion, diced
- 1 red pepper, diced or pimento
- 1 can green peas or 1 1/2 c. frozen peas
- 3/4 c. olive oil
- 3 c. chicken broth or boiling water
- 2 c. uncooked rice
- 1 green pepper, diced
- 3 garlic cloves
- 3/4 c. cooking wine
- 1/2 to 3/4 c. tomato sauce
- salt
Directions

1In a large skillet, heat the olive oil and saute the chicken until light brown.

2Add the onion, garlic and peppers.

3Saute, but do not brown.

4Push sauteed vegetables aside.

5Add salt as desired. Add uncooked rice and stir among the chickens.

6Add the chicken broth, tomato sauce, wine and peas and bring to a boil.

7Remove from heat.

8Cover and place in a hot oven at 400°.

9Bake until dry. Serves 10 to 12.
