Christmas Cookies(Fruit Cake)

  • 1 c. butter, softened
  • 1 c. brown sugar (light)
  • 3 eggs
  • 3 c. flour (plain)
  • 1 tsp. cinnamon
  • 1/2 tsp. soda
  • 1/2 c. cooking sherry wine
  • 7 c. nuts, cut up
  • 1 1/2 lb. candied pineapple
  • 1 1/2 lb. candied cherries (red and green)
  • 1 box white raisins

    Mix butter and sugar together.

    Add eggs; mix well.

    Add flour, cinnamon, soda and cooking wine; mix well.

    Add nuts, pineapple and cherries that have been chopped well.

    Add raisins, mixing well.

    Batter will be stiff.

    Cook on cookie sheet at 275° for about 15 to 20 minutes.
