  • 3 Tbsp. butter
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1/2 c. chopped carrots
  • 1/2 c. chopped turnips
  • 12 peppercorns
  • 2 bay leaves
  • 6 cloves
  • 1/4 c. vinegar
  • 4 c. cold water
  • 4 shavings lemon peel
  • 2 lb. washed fish bones, heads, tails, skins and trimmings
  • 6 Tbsp. butter
  • 6 Tbsp. flour
  • 1 large yellow onion, chopped fine
  • 1/2 c. green pepper, chopped
  • 1 c. okra, sliced thin (fresh or frozen)
  • chopped fresh basil and oregano
  • 1/2 tsp. salt
  • 3 dashes Tabasco sauce
  • 1 can tomatoes (with juice) or 1 c. tomato sauce
  • 1/2 lb. shrimp (fresh or frozen)
  • any available fresh fish

    Cook together for 10 minutes the butter, onion, celery, carrots and turnips. Add peppercorns, bay leaves, cloves, vinegar, water, lemon peel and fish.
