  • 2 1/2 cups self-rising flour
  • 7 tbsp butter, chopped
  • 1 cup sugar
  • 1 1/4 cups buttermilk
  • 1 None egg, beaten
  • 1 cup mixed glace fruit, coarsely chopped
  • 8 oz ready-to-roll white fondant
  • 2 tbsp strained apricot jam, warmed

    Preheat the oven to 400°F. Line 12-cup muffin pan with paper liners.

    Sift flour into medium bowl; rub in butter. Gently stir in sugar, buttermilk and egg. Gently stir in chopped glace fruit. Spoon into muffin cups.

    Bake about 20 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.

    Roll fondant out to 1/8-inch thickness. Using a 1 3/4-inch star cutter, cut out 12 stars. Brush tops of muffins with apricot jam; top with fondant stars. Dust with sifted powdered sugar.
