Ingredients

  • 1 Tbsp. unflavored gelatin
  • 1/4 c. water
  • 4 Tbsp. flour
  • 1/2 tsp. salt
  • 1 1/2 c. milk
  • 1 c. coconut
  • 3/4 tsp. vanilla
  • 1/2 c. whipping cream, whipped
  • 1/2 c. egg whites, beaten with 1/4 tsp. cream of tartar
  • 1/2 c. chopped pecans

Directions

    Soften gelatin in water.

    Mix sugar, flour, salt and milk in a pan and cook over low heat and stir until it boils.

    Boil 1 minute. Remove from heat and stir in gelatin and cool.

    When partially set, beat well.

    Mix in vanilla.

    Gently fold in whipped cream.

    Take 1/4 teaspoon cream of tartar and 1/2 cup sugar.

    Beat until stiff. Fold in cup of coconut and pecans.

    Add to first mixture.

    Pour into baked pie shell.
