Ingredients
- 3 c. cake flour
- 1 tsp. soda
- 1 tsp. cinnamon
- 3 slightly beaten eggs
- 1 (8 oz.) can coconut
- 1 1/2 tsp. vanilla
- 3 c. sugar
- 1 tsp. salt
- 1 1/2 c. salad oil
- 1 (8 oz.) can crushed pineapple (not drained)
- 1 c. chopped pecans
- 2 c. diced bananas
Directions

1Do not use mixer.

2Blend with a spoon.

3Sift dry ingredients together.

4Add remaining ingredients until all are mixed well. Bake in a greased and floured tube pan at 325° for 1 hour and 20 minutes.

5Place foil over cake top for the last 20 minutes to prevent cracking.

6Cool.

7Place in refrigerator overnight before slicing.

8Keep refrigerated.
