Ciabatta With Meatballs

- 5 1/4 ounces ground meat
- 1 egg yolk
- 1 tablespoon mustard
- 2 tablespoons breadcrumbs
- 1/2 onion peeled and chopped
- salt
- ground black pepper
- olive oil
- bacon
- 1 ciabatta loaf
- lettuce
- spinach
- arugula
- Parmesan cheese grated
Directions

1In a bowl, add the ground meat, egg yolk, mustard, breadcrumbs, and onion. Season with with a pinch of salt and black pepper and mix well.

2Shape into small balls.

3In a saucepan, heat olive oil and cook the meatballs for 12 to 14 minutes until golden brown on all sides. With 3 minutes before the meatballs are done, add the bacon slices.

4Slice the ciabatta loaf in halves. Add lettuce, spinach and arugula, and drizzle with olive oil. Add the meatballs and bacon, and sprinkle with Parmesan cheese.

5Close the ciabatta bread, cut into half, and serve.
