Cider Braised Kale

  • 1 large bunch green market kale (tastiest and prettiest with a mix of kale varieties)
  • 1/2 small onion
  • or
  • 1 large shallot
  • 1 tbsp olive oil
  • 1/4 cup cider (apple, pear or mixed)

Directions

    Heat oil in large skillet or wok. Add onions/shallots and saute at medium heat until tender (3-5 minutes). Wash kale and remove tough stems. Add to pan and saute, stirring often, until it cooks down quite a bit. Add cider, stir, and saute until kale is tender.
