- 1 lb boneless skinless white fish fillets, chopped
- 2 tbsp mango chutney
- 1 None lime, juiced
- 1 None egg white
- 1 None small red chili pepper, seeded
- 1 clove garlic, sliced
- 2 cups fresh breadcrumbs
- 1/4 cup firmly packed fresh cilantro leaves, plus additional, to garnish
- 4 None green onions, chopped
- None None Oil, for shallow-frying
- None None Salad, sweet chili sauce, to serve
Directions

1Place fish, chutney, lime juice, egg white, chili pepper and garlic in a food processor. Process until finely chopped.

2Add breadcrumbs, cilantro and onions; process until combined and mixture comes together. Transfer to a bowl. Refrigerate for 10 mins.

3Shape mixture into 8 flattened patties. Heat oil in a large skillet on medium heat. Cook patties, in batches, for 2-3 mins each side, until golden and cooked through. Drain on paper towel. Garnish with additional cilantro. Serve with salad and sweet chili sauce.
