Cilantro Mashed Potatoes

Ingredients
- 1 1/2 lb. potatoes
- 2 Tbsp. butter, melted
- 1 c. nonfat plain yogurt, whisked until smooth
- 1/2 c. finely chopped cilantro (soft stems included)
- 1 tsp. black pepper
- 1/2 tsp. salt or to taste
- cilantro sprigs
- 2 Tbsp. chopped chives
- 2 to 5 Serrano chiles, halved lengthwise
Directions

1Place potatoes in saucepan.

2Cover with water.

3Bring to boil and boil until tender.

4Drain, peel and mash or grate.

5While potatoes are still warm, mix in butter, yogurt, cilantro, pepper and salt.

6Transfer to serving bowl.

7Garnish with cilantro sprigs, chives and Serrano chiles.

8Serves 6.
