Ingredients
- 1 teaspoon olive oil
- 4 -5 mushrooms, sliced
- 1 tablespoon shallot, minced
- 34 cup fresh spinach
- 5 eggs
- 2 tablespoons milk
- salt and pepper (to taste)
- 12 cup cheddar and american blend cheese, shredded
Directions

1In non-stick skillet saute mushrooms in olive oil approximately 3-4 minutes.

2Add shallots and continue cooking for 1-2 minutes.

3Add spinach and cook for another 1 minute (or until just wilted).

4Remove from skillet and set aside.

5In separate bowl, beat eggs, milk, salt and pepper.

6Add to skillet, gently stirring to allow eggs to cook without browning.

7When eggs are about half cooked (still slightly wet) add the mushrooms, shallots and spinach mixture back into the skillet.

8Sprinkle with cheese.

9Continue cooking until eggs are done to your liking and cheese is melted.
