- 2 cups carrots, cooked and mashed
- 1 (12 ounce) can whole evaporated milk (not skim or fat-free)
- 1 cup sugar
- 2 eggs, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 2 teaspoons cinnamon
- 1 (10 inch) unbaked pie shells

1Preheat oven to 400 degrees.

2Combine first seven ingredients in a medium mixing bowl; beat for two minutes.
