  • 1 cup sugar
  • 1 12 cups half-and-half cream
  • 2 eggs, beaten
  • 1 cup heavy cream
  • 1 teaspoon vanilla
  • 2 teaspoons ground cinnamon

    In a saucepan over medium heat, stir together sugar and half and half.

    When mixture begins to simmer remove from heat and slowly whisk into eggs.

    (Pour hot cream mixture slowly, but whisk quickly so that you don't end up with scrambled eggs!

    Pour mixture back into saucepan and stir in heavy cream.

    Continue cooking over medium low heat, stirring constantly until mixture is thick enough to coat the back of a spoon.

    Remove from heat and whisk in vanilla and cinnamon.

    Let cool completely in refrigerator.
