- 1 1/2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/8 c. sugar
- 1/8 c. brown sugar
- 1 tsp. cinnamon
- 3/4 c. pecans, finely chopped
- 1 egg, beaten
- 1 Tbsp. oil (canola)
- milk
Directions

1Mix first six ingredients.

2Add egg and oil.

3Add milk and stir, adding more milk until mixture reaches the consistency of cake batter.

4Heat griddle to 325°.

5Pour batter (1/2 cup per pancake) onto hot greased griddle.

6Turn just as pancake begins to develop bubbles on top.

7(Decrease heat if pancake is too brown.) Serve with warm syrup, fruit preserves or whipped cream.
