- 1 cup water
- 34 cup corn syrup (white is best for this)
- 2 lbs sugar
- 2 teaspoons cinnamon
- 3 lbs pecan halves
Directions

1Combine water, syrup & sugar in a large heavy pan.

2Cook over medium heat to firm ball stage (242F).

3Remove from heat & stir in cinnamon.

4Keep stirring till the syrup stops boiling.

5Add nuts all at one time.

6Stir untill nuts are completely separated & sugar is crystalized.

7Pour onto parchment lined cookie sheet.

8Cool & store in airtight container.
